½ cup hazelnut meal
¼ cup white sugar
¾ cup all-purpose flour
1/4 tsp salt
4 oz unsalted butter , cold, cut into small pieces
1 egg

optional:
hazelnut spread, melted chocolate, or powdered sugar.

Directions:
1. Combine dry ingredients: hazelnut meal, flour, and salt in a medium size bowl or the bowl of your stand mixer and mix or whisk to combine well. (This can also be done in a food processor, pulse to combine.)

2. Add butter and cut in using a pastry blender or your stand mixer with the paddle attachment or food processor on pulse until the butter is incorporated. This process is similar to making pie crust. Scrape the sides of your bowl as necessary.

3. Add the egg and mix until a soft dough forms. Don’t be tempted to over mix.

4. Wrap dough well or put in an airtight container and chill in the refrigerator for at least an hour and for up to 24 hours. 


5. Preheat your oven to 325°F.

6. Remove dough and roll out onto a floured surface to 1/4” and cut into desired shapes (heart cookie cutters).

7. Chill cut cookies in the refrigerator for 30 minutes (this will allow the butter to chill and bake into your cookies and not out of them). 


8. Bake for about 12-15 minutes (depending on size of cut outs), until the edges of your cookies start to brown slightly.

9. Allow cookies to cool slightly before removing to a cooling rack and cool completely before decorating.

10. Fill or drizzle cookies with hazelnut spread, melted chocolate, or top with powdered sugar.

This dough doesn't seem like much, but really does make a fair amount of cookies. However, I do usually double it. (Freeze half the dough, freeze the cooked cookies).
