1egg
1egg yolk, save the egg white
1 cup icing sugar
2½ cups flour
1tsp baking powder
Zest of ½ lemon
7 oz cold butter

Filling
10 tart apples
¼ cup sugar
Zest and juice of ½ lemon
¼ tsp cinnamon

With the wire whip in kitchen aide, mix egg, egg yolk and sugar

Add the flour, baking powder and lemon zest.

Cut cold butter into small pieces, and add tho the mixture using a pastry blender.

Finished dough should have lumps of butter, this will make cake flaky.

Wrap in clear wrap and refrigerate for at least half hour.

To make filling, peel and core apples, grate on largest grater or chop finely.

Place into large frying pan, add sugar and lemon juice and zest. Cook til liquid has evaporated. About 30 minutes, cool.

When ready to bake , preheat oven to 375º

Grease bottom and sides of 8/8” baking dish or line with parchment paper.

Cut dough in half, roll dough to fit dish with enough to go up sides.place cooled filling in baking dish, rough remainder of dough and place on top , brush with beaten egg white .

Bake for 45 minutes or until crust is golden.

My grandmother made a cake very similar to this one, she always had in her fridge for whenever we went to visit.
