½ pound of egg noodles (the noodles must be ¼ inch thick)
3 eggs, separated
1 cup of sugar
2 tbsp vegetarian Crisco (or dairy free sweet margarine)
½ cup raisins or dried cranberries
3 apples, sliced and cored (sliced thin)
2 tsp cinnamon
½ tsp of vanilla

1. Follow the packaged directions for cooking noodles.
2. Drain water from noodles, and then mix the shortening (or margarine) into the cooked noodles while they’re still warm.
3. Add the egg yolks, sugar, fruit, cinnamon, and vanilla and mix well.
4. After everything is mixed well, gently fold in stiffly beaten egg whites
5. Place the noodle kugel into a greased casserole dish
6. Bake at 350 for one hour

This is my late grandmother’s noodle kugel recipe, which she always called “Noodle Pudding.” It was a sweet side dish that she served at every Thanksgiving for as long as I can remember. It’s dairy free so that it could be served with a meat course and still not break the rules of her kosher kitchen. I still make this every Thanksgiving in her honor.
