1 box medium shell pasta
2 16oz bricks seriously sharp white cheddar, grated (the sharper the better)
15oz can diced tomatoes (drained)
Cubed ham (use as much as you want)
Peas, optional (gma’s original recipe, I leave them out)
2-3 cups milk
3ish tbsp flour
3ish tbsp butter
Salt, pepper, garlic powder to taste

Cook pasta. Drain. Put it back in the pot and set aside.

While it’s cooking, make roux:
Sautee butter and flour until combined, add milk. Whisk until smooth and let thicken. Add cheese and whisk until smooth. Add salt, pepper, and garlic powder to taste. A little garlic powder goes a long way. The sharp cheddar is the star of the show here!

Add sauce to drained pasta in the pot and mix well.

Now we layer! Find your fave 9x13 casserole dish and pour half Mac & cheese into it. Sprinkle ham cubes and drained diced tomatoes on top. Don’t stir! The tomatoes will change the color of the sauce and it just won’t be the same.
Repeat!

Cook at 350º for 30ish min
