1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup 10x powdered sugar
2 tablespoons fresh basil leaves, chopped
1 1/2 teaspoon finely grated lemon zest
1 tablespoon fresh squeezed lemon juice
1/2 cup (1stick) butter, cold
4 Tablespoons Demerara sugar

1. Cube the butter and put it in the freezer for about 15-20 minutes while you're getting the other ingredients 2. prepped and ready.
Preheat oven to 375 degrees.
3. In the bowl of a food processor, add the flour, salt, powdered sugar, basil, lemon zest and lemon juice. Process until well combined.
4.Take the butter out of the freezer and break it up into the flour mixture. Pulse several times until you get a dough consistency.
5. Roll into 1 inch balls and place on a baking pan about 3 inches apart. Using your fingers, press each ball into a 2 inch disc and sprinkle with Demerara sugar.
6. Bake in a preheated 375 degree oven for 12-14 minutes until the edges just start to turn a golden color.
