1 box Lemon cake mix
½ cup vegetable oil
2 large eggs
1 lemon zested and juiced
¼ cup powdered sugar

Directions:
Preheat oven to 350 degrees. Combine dry cake mix, eggs, oil, lemon zest and lemon juice. Stir until well combined. Place in refrigerator for 15 - 20 minutes. Using a medium scooper scoop dough and roll into balls. Roll balls in powdered sugar. Place on parchment lined cookie sheet at 2 inches apart. Bake 9-11 minutes, do not brown. Let cool for 5 minutes and then remove from cookie sheet to cookie rack. Enjoy!
