½ Cup Shortening
1 Cup Sugar
1 teaspoon lemon peel if wanted or ¼ or ½ teaspoon limon instead of vanilla
1 Egg
2 Tablespoons Milk
½ Teaspoon Vanilla ( if preferred instead of lemon)
2 Cups Flour
1 Teaspoon Baking Powder
½ Teaspoon Salt(Mix with Baking Soda in a small bowl)
½ Teaspoon Baking Soda(Mix with Salt in a small bowl)

Directions:
Directions:
Mix shortening, sugar, egg, milk, and vanilla until well blended. Mix dry ingredients ( flour, baking powder, salt, and baking soda) in shortening mixture. Flatten after dropping by teaspoon. Bake 10 minutes at 400º F on lightly greased cookie sheet or use parchment paper.

Aunt Claudine only used 350º F for about 10 minutes. It says it makes 3 dozen but she didn't get that many. The vanilla was her addition because she never used lemon peel.
