3 cups flour (Martha White Hot Rise Plus Self-Rising Flour)
½ cup and 2 Tbsp. Lard
½ tsp. soda
1 ⅓ cup buttermilk

Directions:
Directions:
Mix flour and soda together.
Cut in lard with two knives or a pastry blender.
Add buttermilk. Will be sticky.
Flour counter generously. Put dough in the middle carefully turning to cover with flour.
Roll dough out to about ½ - ⅔ in.
Place on greased pan. Use the back of a spoon to smear bacon drippings lightly.
Bake at 450º 18 - 20 minutes or until lightly brown.

Originally, there was no written version for bisquits. As Grammy made them, she took hands full of flour, a pinch, a smidge. Her measuring utensils were her hands, sense of touch to feel the dough and maybe a pinch to taste. All of this happened deftly as it was done by her mother.
My generation needed a precise recipe. She allowed me to watch her scoop, then I measured to finally come up with a written version. They never quite measure up to hers but I carry that memory in my heart.
