1oz Butter
2 Tbsp Flour
2 onions
1 1/2 pts milk (3 cups) cream
5 slices of stale white bread crusts off.
Whole cloves
Pinch of nutmeg

Ingredients can be adjusted to suit amount needed

I also like my nan have to have a glass of port as soon as I start to smell the Turkey cooking, family tradition!

Stud one onion all over with cloves.
Grate one onion and add to milk then add clove studded onion, simmer gently for 1/2hr.
Melt butter in another saucepan and add 2 Tbsp flour to make roux add a little milk to
blend. (can be put into a blender if too thick and lumpy). Discard cloved onion and add onion and milk mixture to flour and butter roux always on low heat to avoid thickening too quickly. Break bread into small pieces and add to pan along with a pinch of nutmeg.
Stir frequently with wooden spoon until desired thickness also adding desired amount of cream. (Will thicken as it cools also).

Great old fashion English dressing for Turkey or Chicken. I would never let a holiday of by without it, my family loves it over Brussel sprouts also.

The first Christmas I got married 1965 I telephoned my nan for the receipt, she was a great cook. I loved to have her tell me how to make this dish (even though I knew how by now) so I called every Christmas Day until she died. I always think of her when I make this recipe.
