2 c unbleached flour
2 c oatmeal
1 c shortening (1/2 c butter softened, 1/2 crisco)
2 eggs
1 c white sugar
1 c brown sugar
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 T real vanilla
1 c raisins

Directions:

Preheat oven to 350
In mixer, cream crisco and sugar. Add eggs one at a time. Add flour, oatmeal, and remaining ingredients. Mix together to form cookie dough.
Grease cookie sheet with cooking spray.
Place 1 ounce scoops, of cookie dough, 3 per row, 2 inches apart on cookie sheet. Be sure to keep them the same size so they cook evenly.
Cook exactly 12 minutes. Let cool on pan for a few minutes and then transfer to cooling rack. Cooling rack is better because if they cool completely on hot cookie sheet, they become too hard and crispy. The ideal cookie is chewy.
