1/2 cup butter
1/2 cup shortening
1 cup white sugar
1 cup brown sugar
1 T vanilla extract
1 1/2 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 T cinnamon
3 cups Old Fashioned Rolled or Quaker Quick Oats (do not use instant)
3/4 cup chopped walnuts (use 1/2 cup if using raisins)
1 cup raisins (optional)

Directions:

Preheat Oven to 350 degrees.
Beat the shortening and butter with the sugars. Add the eggs and vanilla extract and beat well.
In a separate bowl, whisk together the flour, salt, baking soda and cinnamon. Add to the sugar and egg mixture and mix well. Add 1 T Water and mix. Add walnuts and/ or raisins, if desired. Add and stir in oats last.
Spoon out by heaping tablespoons onto greased cookie sheets. Bake for approximately 10 minutes. Remove to wire rack to cool.

Cookies will keep in airtight container for several days or put in plastic bags and freeze until needed. (Hint: they are good frozen!)
