1.5 cups sugar
1 cup butter
2 teaspoons baking soda
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup dark molasses
2 cups sifted all-purpose flour
1 large egg
Add a little water to adjust thickness

Preheat the oven to 350 degrees F

Combine flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture until blended.

Add one cup of melted butter in a large bowl and mix with an electric mixer. Gradually mix in sugar. Add egg and molasses and beat. Adjust thickness with water if necessary.

Pinch off small amounts of dough and roll them with your hands into 1-inch-diameter balls.

Bake in the preheated oven until tops are rounded and slightly cracked, about 10 minutes. Cool cookies on a wire rack.

This is a recipie from the Roecker Family Bakery in Marion, Ohio. I obtained the recipie from Jean Ann Roecker. The original reicpie called for 25 pounds of flour so I've tried to adjust each of the ingredients accordingly. Some proportionately adjusted ingredient amouonts did not seem quite right for a small batch so I adjusted a few things conforming them in volume to another small batch recipie.
