1 cup peanut butter (creamy or chunky)
1 cup gran sugar, ½ cup packed brown sugar
½ cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
1½ cups all-purpose flour
1 tsp baking soda, ½ tsp baking powder
¼ tsp salt

Preheat oven to 350°. Line two baking sheets with parchment paper. In large bowl, beat together peanut butter, granulated sugar, brown sugar & softened butter until creamy using an electric mixer on med speed for 2-3 min. Add Egg & Vanilla, Beat in egg & vanilla extract until well combined.
In separate bowl, whisk together flour, baking soda, baking powder & salt. Gradually add dry ing to peanut butter mix, mixing just until combined. Be careful not to overmix, can make cookies tough. Roll dough into 1" balls; place on prepared baking sheets, spacing 2" apart. Flatten each ball with fork, making crisscross pattern.
Bake in preheated oven 10-12 min until edges are lightly golden. The centers may still look a bit soft, but they will firm up as the cookies cool. Allow cookies to cool on baking sheets 5 min before transferring to wire rack to cool.
