1 1/2 c. cooking oil
2 c. sugar
4 eggs
2 c. flour
1 t. salt
2 t. soda
2 t. cinnamon
3 c. grated carrots
1/2 c. chopped pecans



Icing:

1 9 oz.pkg. cream cheese
1 lb. powdered sugar
1/4 c. butter
2 t.vanilla

Directions:
Directions:
Beat together sugar and cooking oil. Add eggs and beat until well mixed. Blend in flour, salt, soda and cinnamon. Slowly mix in carrots and pecans. Pour in 2 greased and floured 9" cake pans.
Bake in 350 oven for 30 to 35 minutes or until done. When cool frost with icing.

Icing: Soften cream cheese and butter. Then add rest of the ingredients and mix well.
