This is a "no recipe" recipe. You just add however much you want and it is delicious. It is a great way to use leftover ham.

leftover ham with bone
onion - diced
olive oil
chili powder
cumin
chipotle chili in Adobo - these are very hot use sparingly
tomato sauce or tomato paste
Ro-Tel canned tomatoes
canned chili beans (not canned chili con carne, just canned pinto beans in chile sauce such as S&W)
chicken broth
grated jack or cheddar cheese
sour cream

Slice as much meat as you can from hambone and set aside. Dice onion and sauté in a dutch oven with olive oil. Add chili powder and cumin and toast slightly. Add hambone, chipotle, tomato sauce, Ro-tel tomatoes, and broth. Simmer for an hour or more. Remove hambone and remove any remaining meat from the bone. Add all of the ham and simmer a bit longer. Add beans and simmer until warm. When serving, garnish individual bowls with cheese and sour cream.

This is from my grandmother Zellor. While she wasn't a particularly good cook, she was very efficient. This was a delicious exception. As a child, I assumed she used all homemade ingredients until she was spied madly opening cans of chile beans etc. Regardless, I love it and have served it for our Tuesday soup ministry.
