3 c. Brazil nuts
1 lb. pitted dates
1 c. (8 oz. jar) maraschino cherries drained
3/4 c. sifted flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. vanilla

Directions:
Directions:
Put Brazil nuts, dates & cherries into large bowl. Sift flour, sugar, baking powder & salt over nuts & fruit. Mix with hands until nuts & fruit are well coated. Beat eggs until foamy, add vanilla. Stir into nut/fruit mixture until well mixed. Turn into greased & wax paper lined loaf pan. Bake in low oven, 300º, 1 hour 45 min. Cake must be cooled before slicing. Slice thin as is too rich to eat thick.

Mama got this recipe off the back of a Brazil nut bag many years ago. I put cake in refrigerator to make it easier to slice. Electric knife works great in slicing this cake.
