2¼ cups of all purpose flour
1 teaspoon baking powder
1 teaspoon cornstarch
1 teaspoon salt
¼ teaspoon baking soda
1½ cups of granulated sugar
lemon zest of 3 lemons - approx. 3 tablespoons (or 1 tablespoon of lemon peel)
1 cup butter melted and cooled slightly
1 egg
1 egg yolk
1 cup fresh blueberries

Preheat oven to 375º F and line baking sheets with parchment paper. Set aside.

In a small bowl, add flour, baking powder, cornstarch, salt and baking soda. Mix well and set aside.

In a separate bowl, add sugar and lemon zest and mix well. Stir in butter, egg and egg yolk; mix well. Stir in flour mixture just until combined. Fold in blueberries.

Using a 2 tablespoon portion scoop, scoop dough onto prepared baking sheet, 3" apart and bake 10-12 minutes or until the edges of the cookies just begin to brown. Let stand on the baking sheet for 3 minutes and place on a wire rack to cool completely.

I don't recommend using an electric mixer to make this recipe. I find that hand mixing the batter is easier and best.
