1 lb dry navy beans
4 qts water, divided
1 medium onion, chopped
1 c real maple syrup
1/2 c ketchup
1/4 c barbeque sauce
5 tsp cider vinegar
1 tsp prepared mustard
1 tsp salt
1/2 tsp pepper
8 slices bacon, cut up OR 1 c cooked ham cubes

Rinse beans; place in a 4-qt. Dutch oven. Cover with 2 qt. cold water. Bring to boil, reduce heat and simmer for 2 minutes. Remove from heat;. cover and let stand 1 hour. Drain beans and rinse. Return beans to dutch oven and cover with remaining water. Bring to boil, reduce heat and simmer 30-40 minutes. Drain and reserve liquid. Combine beans and all remaining ingredients in a bean pot or casserole; cover and bake at 300º for 2 1/2 hours, or until tender. Stir occasionally. Add reserved liquid if mixture gets too dry.
