1/4 c butter
1 c flour
1/2 tsp salt
1 1/2 pint milk
8 oz cheddar cheese, shredded
1 pt chicken broth
8 oz stale beer
Paprika to color-optional
1/4 c finely diced each celery, onion,

green pepper, and carrot

Directions:
Directions:
Over low heat, melt butter in sauce pan, mix in flour and salt. Gradually add milk, stirring constantly over medium heat, until thickened. Melt cheese into sauce; remove from heat and set aside. In large soup pot combine broth and chopped veggies, bring just to boil and reduce heat. To this add cheese mixture, bring back to simmer, stirring constantly. When ready to serve add stale beer. Sprinkle with paprika. May be served with popcorn on top.
