3/4 C flour
1/4 tsp baking soda
7 Tbs butter, divided
1/3 C dark brown sugar
1/4 C granulated sugar
1 tsp vanilla
1 tsp water
1/2 tsp salt
1 egg yolk
2/3 C semisweet chips

Directions:
Directions:
Preheat oven to 375º.

In medium bowl, whisk together flour and baking soda. Set aside.

In skillet over medium heat, melt 5 tablespoons butter. Cook, swirling constantly, until butter is dark golden brown, 1-3 minutes. Transfer to bowl. Add remaining 2 tablespoons butter and stir until completely melted. Whisk in brown sugar, sugar, vanilla, water, and salt. Add egg yolk. Whisk until smooth. Let mixture stand 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times (mixture should be thick, smooth, and shiny). Stir in flour mixture until just combined. Stir in chocolate chips.

Working with 3 tablespoons dough at a time, roll into balls and space 2 inches apart on prepared sheet. Bake 10-14 minutes or until cookies are golden brown and still puffy and edges have begun to set but centers are soft. Let cool on baking sheet 5 minutes. Transfer to wire rack to cookies cool completely.
