1 large green bell pepper
1 medium white or yellow onion, diced
2-3 ribs celery, finely sliced
1 8 oz. container sliced mushrooms
1 15 oz. can diced tomatoes (I sometimes use the can that has the added peppers, celery and onions for even more flavor)
1 8 oz. can tomato sauce
1 lb. ground beef
1 lb. elbow macaroni
salt
pepper

Brown hamburger. If you use a lower fat content it won't have to be drained before adding pepper and onion. If there is a lot of fat, drain all but a tablespoon or two. Simmer all together for about 10 minutes. Add tomato sauce and mushrooms. Salt and pepper. Garlic salt can also be added if you like it.

While sauce is simmering, cook elbows to al dente, drain, then add to sauce and meat mixture. Let rest for 2-3 minutes so flavors blend. Parmesan cheese can be added when serving. Yum!
