1 3/4 + 1/8 c. cake flour
2 1/4 + 1/8 c. sugar
1 3/4 + 1/8 (or 1 egg white) c. egg whites
1/4 +1/8 tsp. salt
1 1/2 tsp. cream of tartar
1 1/2 tsp. vanilla or almond flavoring

Sift flour once and measure. Add 1/2 of the sugar (1 1/4 c.) to flour and sift three times. Beat egg whites and salt together until foamy. Sprinkle cream of tartar over egg whites and beat at high speed until stiff. Fold in with beater remaining sugar (1 1/8 c.) and flavoring. Then fold in flour and sugar mixture with spoon. Pour into angel food cake pan and bake at 275 F for 30 minutes. Increase to 325 F and bake for another 30 minutes. Let cool in pan for one hour while inverted on neck of tall bottle. Remove from pan and frost as desired.

This recipe is from my grandmother -Laura Patterson McFarland. It makes an extra large angel food cake. It has become my son Jeff's favorite birthday cake. She used the leftover egg yolks in a jelly roll.
