5 large ripe bananas
4 eggs well beaten
1 cup shortening (I use butter flavored Crisco)
2 cups sugar
4 cups sifted flour
2 tsp soda
1 tsp salt
1 cup chopped walnuts or pecans (optional)

Directions:
Directions:
Put bananas one at a time in a blender, blend well, then add eggs one at a time, blend well.
Cream shortening and sugar until fluffy
Add banana mixture
Add sifted dry ingredients, and stir until mixture is smooth, then fold in nuts.
Bake at 350 for 45-55 minutes
Makes 2 loaves
