3 quarts water
4 cups chicken broth or stock
3 cups chopped leeks, including green tops
3 cups potatoes, peeled and chopped
3 cups carrots, chopped
2 celery ribs
1/2 tsp savory
1/2 tsp marjoram
1/4 tsp rosemary
1 tsp parsley
salt and pepper

Directions:
Directions:
Bring the chicken broth to a boil, then add the leeks, potatoes, carrots, and celery.
Simmer for 30 - 45 minutes, until the vegetables are tender.
Add the seasonings and simmer for another 30 minutes.
Purée in batches and serve hot or cold.
