Meat Mixture:
2 lbs. ground Beef
2 Tbs. Oil
2 tsp. Oregano leaves
2½ tsp. Cumin
1½ tsp. Salt
2 Potatoes, cubed,
1-2 cups Guajillo Sauce

Guajillo Sauce:
Dried Guajillo peppers
Hot water

Tortilla Pouch:
4 cups Maseca Tortilla flour
¼ cup Oil
½ tsp Salt, more or less
Warm water

Meat Mixture: Fry ground beef with oil until no longer pink, add seasonings and potatoes. Cover the pot and let cook until potatoes are soft. Than add the Guajillo sauce and simmer for an other few minutes.

Guajillo Sauce: Place peppers in a jar or bowl and pour boiling hot water over it and cover then let rest for 1 hr. or so. Scoop out the peppers into a blender and some of that water to liquefy. Blend until smooth then pour through a sieve to strain.

Tortilla Pouch: Mix Maseca, salt, oil and water until a soft dough forms. Roll into small balls and press into a small tortilla about ⅛ - ¼" thick. Preheat a tortilla disc on the oven over medium to high heat. Place tortilla on hot Comal and bake till lightly baked. Flip and again bake till lightly browned flip once again and press unto the tortilla lightly with a flipper tool till the tortilla starts to bubble, keep baking to allow inside to fully bake. Cut the tortilla open and fill with meat.
