2 cups cornmeal
1 C flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/4 tsp salt
1 1/4 C whole milk
1 C sour cream
8 Tbs unsalted butter, melted
3 Tbs sugar
2 eggs, beaten

Directions:
Directions:
Preheat oven to 425º. Grease 12-cup muffin tin.

In medium bowl, whisk together 1 1/2 cups cornmeal, flour, baking powder, baking soda, and salt.

In large bowl, combine milk and remaining 1/2 cup cornmeal. Microwave for 1 1/2 minutes. Whisk thoroughly and continue to microwave, whisking every 30 seconds, until thickened to batter-like consistency, 1-3 minutes longer. Whisk in sour cream, melted butter, and sugar until combined. Whisk in eggs until combined. Fold in flour mixture until thoroughly combined. Using scoop, place 1/2 cup batter in each muffin cups Batter will mound slightly above rim.

Bake 13-17 minutes until tops are golden brown and toothpick inserted in center comes out clean. Let cool in tin on wire rack for 5 minutes. Remove from tin and let cool 5 minutes longer. Serve warm.
