2 cups ricotta cheese
2 cups crumbled feta cheese
3 eggs
dash of pepper
1 pound phyllo
1 pound butter, melted

Directions:

Combine cheeses, eggs and pepper, blend thoroughly.

Cut phyllo in thirds, each measuring 12x5½ inches.

Prepare one strip at a time, covering remaining strips with waxed paper and a damp cloth to keep from drying out. Brush entire strip lightly with melted butter. fold strip lengthwise into thirds.

Spread 1 heaping teaspoon of cheese mixture on corner nearest you and fold corner over to forma triangle. Continue folding pastry in triangles down the full length of strip (flag style) to make one multilayered triangle. Prepare remaining strips the same way.

Arrange triangles on a buttered baking sheet, or use parchment paper instead of butter. Brush triangles with melted butter. Bake at 350º for 25 minutes or until golden brown. Serve warm.

Unbaked triangles may be frozen. To freeze, place triangles in a single layer on parchment paper on a baking sheet and place in freezer until frozen. Once frozen, place triangles in a freezer safe container or freezer bag. To bake, remove from freezer and bake as above. DO NOT THAW TRIANGLES BEFORE BAKING.
