24 white button mushrooms
1 1/2 C herb pub cheese
1/2 C grated Parmesan cheese
3 slices provolone cheese, chopped
2 Tbs half and half
1/2 C Panko breadcrumbs
White Cheddar Sauce:
1 C white cheddar, grated
1 Tbs flour
1/4 C half and half
1/8 C dry white wine
1/4 tsp Worcestershire sauce
1/8 tsp dry mustard
1 dash pepper
1/2 C mayonnaise or sour cream

Preheat oven to 375º. Clean mushrooms and remove stems. Stuff each mushroom with the herb pub cheese. Combine grated Parmesan, Provolone, and half and half. Microwave for 25 seconds. Stir in panko. Let it cool. Top each mushroom with mixture.

Place mushrooms parchment paper lined baking sheet. Bake 15 minutes or until tops are golden and bottoms are still firm enough to hold their shape. Let sit for 5 minutes prior to serving.

Sauce: Toss white cheddar with flour. Combine half and half, white wine, Worcestershire sauce, dry mustard, pepper, and mayonnaise. Heat in a double boiler over simmering water for 15 minutes, stirring occasionally. Gradually sprinkle in cheddar. Stir until combined. Spread on serving plate and add the mushrooms on top.
