2 c Flour
2 c Sugar
1 tsp Baking powder
1 tsp Salt
1 tsp Cinnamon
1 tsp Baking soda
1 c Vegetable oil
3 c Shredded carrots
4 Eggs

Directions:
Directions:
Preheat oven to 325º

In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix until well blended. Stir in carrots, oil and eggs. Using mixer, mix together until combined. Continue mixing on medium for approximately 2 minutes more.

Spray 13 x 9 baking dish with Pam Baking Spray (must be the breaking spray). Pour batter into baking dish. Bake for 50 to 60 minutes, or until knife inserted in middle of cake comes out clean. Let cake cool. Frost cake with cream cheese frosting.( See Granny Gran's recipe)

Store in the refrigerator
