FISH
1. 3-4 flounders (¾-1 pound)
2. Salt to taste
3. 1 stick butter
4. Lemon juice or lemon pepper

STUFFING
1. 1 cup crab meat
2. 1 Tbsp bacon drippings
3. 1 medium onion, chopped
4. 2 cloves garlic, minced
5. 2 Tbsp celery, chopped
6. 1 shallot, chopped
7. ¼ tsp salt
8. ½ tsp pepper
9. ⅛ tsp thyme
10. 1 Tbsp parsley, chopped
11. 1 egg
12. ¾ cup bread crumbs
13. 2 Tbsp bellpepper, chopped

Directions:
Directions:
1. Preheat over 375º-400º.
2. Mix all stuffing ingredients.
3. Melt butter in pan.
4. Stuff fish and lay flat in pan without overlapping. Top fish with leftover stuffing.
5. Cook about 15 minutes. Drip lemon juice or lemon pepper and bake for 15 more minutes.
