3- to 4-pound dressed red snapper
Melted butter
Salt and pepper

Directions:
Preheat oven to 350 degrees.

Wash and dry fish; place in buttered shallow baking pan. Sprinkle cavity of fish with salt and pepper; brush inside and out with melted butter. Bake in moderate oven (350 degrees) 1 hour or till fish flakes easily when forked, brushing now and then with butter.

Serve with one or several seasoned butters.
