Ingredients: 1 pound elbow macaroni 1/4 cup butter 2 cups water 1/2 cup nonfat dry milk powder 1 egg yolk 8 slices American cheese torn into small pieces 1 & 1/2 cups grated cheddar cheese 1/2 cup cheddar cheese 1/2 cup grated Monterey Jack 1/2 cup grated Parmesan cheese 1 tsp salt 1/8 tsp ground paprika Pinch of ground turmeric

Directions:Boil macaroni noodles for 20 minutes to prevent soaking up liquid later after cooking Toss in oil to keep from sticking together Make cheese sauce by melting the butter then add flour and cook and stir for 3 minutes Combine water and milk powder whisk together Slowly pour into the butter cook for 10 minutes or until slightly thickened Place egg yolk in a bowl and add 1/2 cup of hot milk and whisk add 1/2 cup more hot milk and whisk then pour egg mixture back into pot Remove pot from heat and start by adding American cheese then cheddar, Monterey Jack and Parmesan stirring until melted Pour cheese over noodles and stir gently Top with 1/2 cup grated cheddar cheese and 1/2 cup grated Monterey Jack Broil just until cheese is bubbly |
