1 Cup warm (110º to 115º F.) Water
1 Envelope active dry yeast
3-¼ Cups bread, semolina or unbleached all purpose flour
1 tsp Salt
¼ Cup olive oil, preferably extra virgin

Directions:
In a small bowl dissolve the sugar in warm tap water that registers 110º to 115º F. Sprinkle the yeast over the water and stir gently till it dissolves, about 1 minute. Let stand in a warm spot until a thin layer of foam covers the surface, about 5 minutes indicating the yeast is effective. Combine 3 Cups of flour and salt in a large mixing bowl. Make a well in center of flour and pour yeast mixture and oil in. Using a wooden spoon stir flour into the well. Turn dough out onto lightly floured surface, kneading dough, gradually add remaining flour until dough is no longer sticky or tacky. Continue kneading until dough is elastic and shiny. After kneading, place dough in a ball into a heavily oiled bowl turning to coat all sides of the dough. Cover bowl tightly with plastic wrap and set to rise in a draft free warm place until doubled in bulk (45 min). With your fist punch down dough to prevent overrising. Shape into ball, pressing out air bubbles. Preheat oven to 500ºF 1 hour before assembling pizza. Bake for approx 10 min until crust is crispy.
