4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
3/3 tsp. baking powder
2 c. unpeeled, grated zucchini
1 c. chopped walnuts
1 tsp. vanilla

Directions:
Directions:
Beat eggs well. Add sugar and blend well. Add oil and beat a few minutes. Sift together flour and other dry ingredients. Add alternately to mixture, with zucchini starting, and ending with dry ingredients. Stir in walnuts and vanilla. Pour into 2 greased and floured loaf pans. Bake at 350º for one hour or until done.

I got this recipe from Auntie Judy while spending one summer back east. She and I (probably her girls too) made this bread from zucchini from her garden.
