8 fresh Anaheim or Hatch green chiles
1/2 lb. Monterey jack cheese (or any cheese or combination desired)
flour
4 eggs, separated
1 tsp. salt
1/4 C. flour
oil for frying

Directions:
Directions:
Place chiles over flame of gas stove or grill or under broiler until black spots appear. Place in plastic bag for 10 minutes. Peel and remove seeds leaving stem intact. Cut slices of cheese into sticks to fit inside chiles. The cut edges of chiles should slightly overlap. Roll each chile in flour.
Beat egg whites with salt until soft peaks form. Beat yolks until thick and fold into whites. Fold in 1/4 C. flour. Heat 1/4" of oil in frying pan over medium-high heat. Dip each chile in batter until coated heavily and fry until lightly browned on both sides. Drain on paper towel. Serve hot.

Rather than dipping the chiles, the egg batter may be spooned into the hot oil in the frying pan to the approximate length of the chiles. The chiles placed on top and then covered by another layer of the egg batter.
