3 eggs
1 C. oil
2 C. sugar
2 C. grated unpeeled zucchini (raw)
2 tsp. Baking powder
1 tsp. Salt
1 tsp. Baking soda
3 tsp. Cinnamon
3 tsp. Vanilla
3 C. flour
1 C. chopped nuts (optional)
1 C. coconut (optional)

Directions:
Directions:
Preheat oven to 325ºF.
Beat eggs and oil until smooth.
Add sugar and zucchini and blend.
Mix in baking powder, salt, soda, cinnamon, vanilla, and flour and blend well.
Add the nuts and coconut.
Pour into greased and floured 9"x5" loaf pan (or four 3"x5" loaf pans).
Bake for 1¼ hours or until toothpick inserted in center comes out clean.

This recipe is easily doubled.
Chocolate chips (mini for smaller loaves) may be added.
To make apple bread, substitute coarsely chopped apple for the zucchini.
