For the Dough:

¾ cup warm milk (whole milk or oat milk preferred)
2 ¼ tsp yeast
¼ cup granulated sugar
1 egg plus 1 egg yolk, at room temperature
¼ cup butter, melted
3 cups bread flour, plus extra for dusting
¾ tsp salt


For the Filling:

2/3 cup dark brown sugar (light brown sugar is also suitable)
1 ½ tbsp ground cinnamon
¼ cup butter, softened

For the Icing:

1/2 cup butter, softened
1 1/2 cups icing sugar
1 tsp vanilla extract

Directions:
Directions:
Start by warming the milk in the microwave for 45 seconds. Sprinkle yeast on top, then add sugar, egg, egg yolk, and melted butter, mixing until well combined. Stir in the flour and salt with a wooden spoon until a dough begins to form. Knead the dough in a stand mixer for 8 minutes, adding a small amount of flour if it sticks to the sides of the bowl.

Transfer the dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel, and let it rise for 1 to 1 ½ hours, or until doubled in size. After the dough has risen, place it on a well-floured surface and roll it out into a 14x9 inch rectangle. Spread softened butter over the dough, leaving a ¼ inch margin at the edge.

In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture over the buttered dough and rub it into the butter. Begin preheating the oven to 350 degrees Fahrenheit.

Tightly roll the dough up, starting from the 9-inch side, and place it seam side down, making sure to seal the edges. Cut the roll into 1-inch sections using a serrated knife. Place the cinnamon rolls in a greased baking dish lined with parchment paper, cover with plastic wrap and a warm towel, and let them rise for another 45 minutes.

Bake the rolls for 20-25 minutes or until just golden brown on the edges. Allow them to cool slightly before serving with or without icing.
