4 cups potato, peeled and chopped
3/4 cup onion, chopped
4 cups chicken broth
1/2 tablespoon salt
1/2 tablespoon pepper
4 tablespoons butter
1/4 cup flour
1 1/2 cups heavy cream
1/4 cup sour cream
2 cups shredded rotisserie chicken

Toppings - shredded cheese, crumbled bacon, chopped scallions

Directions:
Directions:
Add the potatoes, onions, broth, salt & pepper to a slow cooker.
Cover and cook potatoes till tender - 6 hours low or 4 hours high.
In a saucepan, over medium-low heat, combine the butter, flour, cream, and sour cream.
Whisk until thickened, about 3 minutes.
Pour the cream mixture and chicken into the slow cooker.
Cook on low until the flavors meld together, about 30 minutes.
Top with the cheese, bacon, and scallions.
