3-4 strips of bacon, chopped
1/2 C. white onion, chopped
3 C. flour
1 Tbsp. baking powder
2 Tbsp. sugar, divided
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1/2 C. cold unsalted butter (1 stick), cut into cubes
1 C. sharp cheddar cheese, grated
1 C. plus 2 Tbsp. heavy cream, divided

Preheat oven to 400ºF. line baking sheet with parchment paper.
Cook bacon, onion, and 1 Tbsp. sugar over medium-low heat until bacon is crisp and onion is caramelized, about 15 minutes. Remove from heat and set aside to cool.
In a large bowl, sift together the flour, baking powder, remaining 1 Tbsp. sugar, and salt. Cut in the butter, cheese, onion-bacon mixture and pepper, working dough until it starts to form lumps and come together. Add 1 C. cream and combine just until it comes together. Do not overwork the dough.
Turn dough onto lightly floured surface and pat together, forming two disks approximately 7" in diameter and 3/4" thick.
Cut each disk into 8 wedges and transfer wedges to baking sheet 1" apart. Brush tops with cream. Bake until golden brown, approximately 22-24 minutes.
