2 lbs. dried navy beans
1 teaspoon baking soda
1 medium onion, sliced
1 teaspoon salt
4 teaspoons cider vinegar
1 teaspoon mustard
½ cup brown sugar
¾ cup molasses
¼ cup ketchup
1/16 teaspoon black pepper
1 lb. bacon, cut into ¾ inch pieces

Directions:

Wash beans throughly, and put into a 4 quart saucepan.
Add enough water to cover 2 inches above the beans and soak overnight. Next morning drain and add fresh water, add soda and bring to a boil, drain and rinse. Again add water and bring to a boil. Drain the beans reserving the liquid. Place the onion and the rest of the seasonings; except the salt, into a bean pot, add the hot beans and reserved bean liquid, just to cover the beans. Add the bacon and stir. Cover and bake in a 250 degree oven until the beans are tender, approximately 9 to 10 hours. Stir occasionally and add more liquid if needed. Add the salt towards the end of cooking.
