2 Tbsp. Olive Oil
1 Large Red Onion
3 Large Carrots peeled and sliced
3 Large Sweet Potatoes cooked, peeled and sliced
1/2 cup dried prunes
1/4 cup dried apricots
2/3 cup OJ
Raisins
1 1/2 tsp cinnamon
1/4 tsp nutmeg

Optional: Add 2 tbsp honey and 3 tbsp brown sugar
1/2 cup chopped walnuts for topping

Pre Heat Oven to 350
Heat Oil in Large Skillet. Add Onion and saute until translucent. Add the carrots and continue to saute. Combine the remaining ingredients and stir. Don't worry if the potatoes break apart a little.
Oil a shallow 2 qt baking dish and pour the mixture into the dish, patting lightly. Bake for 45 minutes or until the top is crusty.
Serve hot.
