1 ripe avocado (½ cup mashed)
½ cup cocoa powder
2 large eggs
1 cup brown sugar
¼ cup butter
1 tsp baking powder
1 tsp vanilla extract
¼ tsp salt
½ cup chocolate chips (dark or milk)

Oil a 9 inch square baking dish then line with parchment paper and preheat oven to 325ºF

1. In a food processor, combine the mashed avocado, cocoa, eggs, sugar, butter, baking powder, vanilla, and salt. Process until smooth, stopping to scrape the sides when needed.
2. Fold in the chocolate chips before pouring batter into baking dish.
3. Bake for 40 minutes or until the middle is cooked through (no jiggle when shaken lightly).
4. Allow the brownies to cool completely before serving (it will taste very much of avocado when fresh out of the oven)
5. Slice the brownies into squares once fully cooled. Store in the fridge for up to a week in an airtight container.
