2 lbs beef cut into 1 inch cubes
3 tablespoons all purpose flour
2 tablespoon olive oil
2 medium onions chopped
3 cloves garlic minced
4 cups beef broth
2 cups water
3-5 carrots diced, 3-5 potatoes peeled and cube, sliced mushrooms (optional), 1 cup frozen peas
1 teaspoon salt, 1/2 teaspoon pepper, sweet paprika (optional),
2 teaspoons dried thyme, 2 bay leaves

Directions:

Toss beef cubes with flour and sweet paprika in a bag. In large pot heat the olive oil over medium-high heat. Add beef and brown on all sides.
Add onions and garlic to pot and sauté until onions translucent.
Poor beef broth and water and bring to a boil. Reduce heat and simmer.
Add carrots, potatoes, mushrooms (optional) thyme, bay leaves, salt and pepper. Cover and simmer for 1.5 hours or until beef is tender.
Stir in frozen peas and cooked 10 minutes. Remove bay leaves before serving
