4 Ears Corn on the Cob - Cooked
¼ Stick Butter
¼ C. Sour Cream
¼ C. Mayo (Not Miracle Whip)
½ C. Cotija Cheese, Crumbled
1 TBSP Minced Garlic
¼ tsp. Salt
2 TBSP Lime Juice (Fresh or Bottled)
½ tsp Chili Powder; plus some for sprinkling
Tajin
¼ Cilantro, finely chopped (may be omitted)

Directions:
Directions:
Topping: Mix Sour Cream, Mayo, Cotija Cheese, Minced Garlic, Lime Juice, Salt and Chili Powder. Refrigerate* until ready to use.

Option 1:
Cook Corn then heat a Large skillet over Medium heat until Hot. Add Butter to Precooked Corn* and Roll in Skillet until Pan Seared.* Remove from Pan, Top each piece with topping mixture, sprinkle with Chili Powder, Cotija Cheese and Tajin. Add Cilantro to top.

Option 2: Cook Corn then Top each piece with topping mixture, sprinkle with Chili Powder, Cotija Cheese and Tajin. Add Cilantro to top

*Refrigeration not necessary if you don't have
time.
*Cutting Corn Cobs down the center before Searing makes it easier to sear and also gives more surface for topping per piece.
*Pan Searing means: Slightly browned and some kernels are"Crispy" If corn is cut in half sear both sides for even cooking and better taste.
