5 lbs red potatoes
apple cider vinegar
8 hard boiled eggs
celery
Spanish stuffed olives
Dill pickles, diced
1 Tbsp dried minced onion, reconstituted with boiling water
1 quart mayonnaise
dried parsley

Directions:
Directions:
Wash potatoes well, boil until fork tender. While still hot, dice. Add diced potatoes to a large bowl and sprinkle with apple cider vinegar. Chop eggs,celery,Spanish olives,and pickles. Add to bowl along with reconstituted onion. Dress with mayo and sprinkle with dried parsley. Chill several hours or over night before serving.
