1 lb venison hot sausage
2 quarts water
3 small cans white kidney beans, rinsed well
2 Tbsp olive oil
¼ lb bacon
1 large yellow onion, peeled and diced
3 garlic cloves, crushed
¼ cup minced celery leaves
¼ cup minced fresh parsley
1 small can petite diced tomatoes
1 quart chicken broth
1 large carrot, diced
3 stalks celery, diced
1 thin-skinned potato, diced
1 Tbsp dried basil
1 large zucchini, thinly sliced
1 quart lightly packed kale, center stem removed and chopped
1 cup dry red wine
Salt and black pepper to taste
Parmesan cheese, grated

Directions:
Directions:
Pierce sausage with a fork and put into a 4 quart pan. Add the water and bring to a boil. Reduce the heat, cover and simmer for 20 minutes. Remove from heat and set aside.
In a 6 to 8 quart pan, over medium heat, combine oil, bacon, onion, garlic, celery and parsley. Sauté until onion is limp, about 5 minutes. Add cooking water from sausage, beans, tomatoes, broth, carrot, celery, potato, and basil. Bring to a boil. Add zucchini and kale. Slice sausage into bit-sized rounds, add to soup with red wine and heat through. Serve steaming with parmesan and your favorite crusty bread.

I have only ever made this soup with venison hot sausage. I'm sure other types of savory sausage would work just as well.
