1 bag split peas
1 yellow or white onion
3 carrots, cleaned and chopped into 1 inch rounds
3 celery stalks, cleaned and chopped into 1 inch pieces
1 bay leaf
1 ham bone
Salt and pepper to taste

Enough water/broth to cover all ingredients plus 2 inches.

Saute onion, celery and carrots.
Add water/broth and bay leaf
Add ham bone; ham scraps
Add split peas.

Bring to a boil then simmer to desired thickness. Serve with one of Dad's bread boules!!

Easter isn't the same without Gramp's scalloped potatoes. Well.....the days after Easter aren't the same without Gramp's delicious split pea soup. Gramps always preferred it more on the thicker side. You can adjust the amount of water depending if you too like it thicker or thinner. I love a good bowl where my spoon can stand up on its own.

We always make enough to freeze. Without doubt...about 2 months later we crave it. So, a word to the wise, always make enough to either share or save for later. You will not regret it.
