1 medium to large onion, chopped
Minced garlic
1 lb. hamburger, browned
2 tsp. chili powder
1 tsp. ground cumin
3/4 tsp. kosher salt
1 3/4 c. cooked rice (saffron yellow rice is suggested)
1 - 14.5 oz. can Rotel
1 can black beans (rinsed and drained)
2 oz. shredded cheddar cheese

Sauté the onion and garlic. Brown the hamburger. Mix all ingredients together until cheese is melted and serve on a tortilla or as a hotdish. Suggest topping with sour cream and/or guacamole for added flavor.
