2 medium potatoes
1 Tbsp. butter or margarine
1/2 tsp. salt
1 egg yolk
1 to 1 1/2 c. flour (all purpose)

In covered pan, cook potatoes in enough boiling water to cover for 25 - 30 minutes or until tender; drain. Peel potatoes. In mixer bowl, beat hot potatoes, butter and salt until smooth. Add egg yolk and 1/4 c. flour; beat until smooth. By hand, stir in enough remaining flour to make a moderately stiff dough. Turn out onto floured surface. Knead for 4 - 5 minutes with generously floured hands and shape dough into balls using about 1 Tbsp. dough for each ball. Crease the center of each ball with the handle of a wooden spoon. Cook, several at a time, in large amount of a boiling salted water for 8 - 10 minutes. Remove; drain on paper toweling. Serve immediately with desired sauce, pesto, or butter and cheese.
