Chicken Souvlaki Recipe

5 medium lemons, divided
4 Tbsp. olive oil
4 garlic cloves, minced
2 tsp. dried oregano
1/2 tsp salt
1/4 tsp. pepper
2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
6 whole pita breads

Tzatziki Sauce:
½ cup finely grated cucumber
1 cup thick whole milk Greek yogurt
1 tablespoon lemon juice
½ tablespoon EVOO
1 garlic clove, grated
¼ teaspoon sea salt
1 tablespoon chopped dill
1 tablespoon chopped mint, optional

Directions:
Directions:
Cut 3 lemons crosswise in half; squeeze juice from lemons. Transfer juice to a large bowl or shallow dish. Whisk in oil, garlic, oregano, salt and pepper. Add chicken; turn to coat. Refrigerate 1 hour.

Drain chicken, discarding marinade. Thinly slice remaining lemons. On 12 metal or soaked wooden skewers, alternately thread chicken and lemon slices. Grill kabobs, covered, over medium heat until chicken is cooked through, about 10 minutes, turning occasionally. Serve with pita bread, tzatziki sauce and toppings as desired.

Sauce:
Place the cucumber on a towel and gently squeeze out a bit of the excess water.
In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.
